The Bikini Cocktail
Yields 10 servings
Ingredients for the Clementine Syrup (yields 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g caster sugar
Ingredients for the Cocktail (makes 850ml, serving 10)
400ml premium vodka
100ml classic gin
150ml peach-flavored liqueur
200ml citrus syrup (from the recipe above)
A few cranberries, for garnish
Mandarin essential oil, to finish
Directions
For the Citrus Syrup: Place all the components into a pot, bring to a gentle boil, agitating until the sugar dissolves. After that, remove from the burner and leave to cool fully. Pour to a clean bottle, close it keeping it in the refrigerator, where it will keep for around four weeks.
Preparing the Cocktail Base: Pour all the spirits and syrup into a large bottle, let it rest for one hour, then filter it preferably using muslin, to ensure it's fully clarified.
To serve: Add 85ml of your batch mix into your stirring glass containing ice, and stir lightly for a minute to chill. Pour to a chilled martini glass or a similar vessel, top with the cranberries and complete it using a brief mist of the essential oil over the top.
